Welcome to Ramen Break

In here, sound and flavor walk side-by-side, together. The name came from the legendary sample Amen Break, that notoriously shaped techno and drum and bass. The founders of Ramen Break (originally in Porto), Joanna and Vitor, are both producers and made the unavoidable connection — from Amen to Ramen, in a fusion that was both natural and exciting. Today, the restaurant is based in Braga and lives and breathes the values under which it was founded.

But more than anything, Ramen Break is about food: each plate is made with dedication and passion, assembled with care and served by our wonderful team, which assures each experience is unique.

All of this is wrapped in a space bathed by bright neon lights that take us on a journey through the lit alleyways of Tokyo and Osaka, where street food is truly a sensorial experience. And as music is part of our identity, our sound system and acoustic was designed with attention to detail, so each beat is as rich as our flavours.

Ramen Menu

Choose between our meat broth, rich in collagen and very nutritious, or our veggie broth, with all the flavor and no animal products. These are the bases for all our ramens, covering all diets, from gluten intolerance (switch from traditional noodles to rice noodles) to veganism (ask for no egg in your ramen). There’s something for everyone.

The Process

The whole process starts early, often at dawn. Our broths can take up to 11 hours to make, going through rigorous steps of selection, cleansingness, purification and filtration. Each of them is crucial to ensure balanced broths, free of specks, and with a perfect flavor.

The choice of ingredients is paramount to us — with the exception of Japanese products, we buy from local businesses and from the city market, our neighbour, where we get most of the goods we then use to make our broths. From the very start, sustainability has been a major priority for us, so we made sure to weave a network of local partners and suppliers that share our values. By working closely with local sources, we ensure high quality ingredients and contribute to a more sustainable business cycle.

We work daily to create a space that stimulates the local economy and offers an unique symbiotic experience between food and entertainment. We keep our doors open to anyone who wants to visit and shares our values of equality and respect to all. See you soon!
